                  Brined Marinated ½ Roasted Chicken



Ingredients:


3 ½ Lb Chicken
2 Qt water
¼ cup brown sugar
1 Tbsp salt
4 bay leaves
 1 Tsp whole black pepper corn
4 cloves garlic
2 stems fresh rosemary
2 oz vegetable oil


Method:


Mix all ingredients together, except the chicken and oil. After mixing well, dip the chicken in and marinate for 24 hrs. Pre-heat the oven at 375F, take the chicken out of marinated and dried with paper towel, drizzle with the 2 oz of vegetable oil and roasted for 45 minutes. Let it rest before cut it; split the bird in 2 taking the back, leg and Thai bones off, place the ½ of chicken in the oven for about 15 minutes and serve hot with mash potato and sauté vegetable.
